Banh Mi

 

"Banh Mi is one of the examples of French inflence on Vietnamese gastronomy.

 

"Banh Mi" means "La Baguette", vietnamese style, made with rice flour and wheat.

 

The Banh Mi is as delicious as it is not expensive and you will find Banh Mi everywhere!

 

There is something for every taste !

 

INGREDIENT : The internal foods vary by région, usually consisting of 3 groups:  

  • Animal ingrédients: grilled pork, minced meat with spices, braised pork, pate, Vietnamese sausages,  cheese, fried eggs, ham, butter, spring rolls, beef rolls, etc,
  • Vegetables: sliced cucumbers, cilantro (coriander), pickles, scallions, etc.
  • Sauces, spices: fish sauce, soy sauce, pepper, sauces, soup powder, chili sauce etc.

RECIPE: Available materials for easy use:

  1. Bake hot, crispy bread, make a line along the bodyonion
  2. Put in turn the bread in order: seasoning, butter, pate, meat (or egg, fried meat, spring rolls, beef rolls...)
  3. Add vegetables (cucumber, onion, coriander, ...) to the top of existing meat
  4. Finaly, sprinkle with the sauce  

Pho

      INGREDIENT

  • Beef tenderloin: 500 grams
  • Beef bone: 2 kg
  • Onions: 200 grams
  • Coriander root (coriander): 6 roots
  • Cane: 2 slang (each slang is about 10 cm long)
  • Pho noodles: 500 grams
  • Spices: Fish sauce, salt, sugar, peeper, cooking oil, chili sauce, soy sauce, dried cinnamon, star anisé, cardamom, fresh ginger, red   onion, garlic ...
  • Types of herbs, bean sprouts, horn peppers, lemons, coriander, scallions ...

       RECIPE

        Step 1: Preliminary processing

  1. Beef bones you put in boiling water for about 5 minutes then take out and wash.
  2. Onions, red onions, ginger, sugarcane leave the skin cooked. Then you scrape off the ginger skin and wash the onion thoroughly. 
  3. Sliced ginger, sliced onions to separate.
  4. Cane after peeling water split pieces to separate.
  5. Pick scallions, cilantro washed, soaked with diluted salt water and then chopped.
  6. Roast star anise, cinnamon, cardamom, scent in low heat until fragrant and place in a tight cloth bag.

       Step 2: How to make beef noodle soup

  1. Boil the beef bone broth in a pressure cooker for about 40 minutes, then add the spices such as onion, sugar cane, ginger, coriander root, apply the mixture of spices to the broth and then simmer for 3 hours. .
  2. Pay attention to adjust the seasoning to taste

        Step 3: Decorate and complete the beef noodle soup

  1. Beef sliced thinly according to grain. To make beef noodles, you bare the beef with boiling water and set it aside.
  2. Pho pho through boiling water and then put into the bowl, then give the beef has been bare, the herbs above. Then use the broth to cook the beef.
  3. When eating, you eat together, raw vegetables, bean sprouts, lemon, chili, chili sauce ... will be very delicious

Banh Xeo

"Large or small, the round, savory crepes get their name from the sound of rive flour sizzling on a hot pan -Banh Xeo literaly means "sizzling cake" - ans showcase a range of local ingrédients depending upon the region it's served.

Though it's unclear when theses tasty pancakes first came into existence, most agree that the original Banh Xeo hailed from central Vietnam".  

              INGREDIENT

  • Pancake flour
  • Beer (help crust long)
  • Bacon
  • Shrimp
  • Raw green skin
  • Onions, scallions, dry onions, bean sprout, carrots, fresh peppers, lemons, garlic, vegetable
  • Salt, pepper, sugar

      RECIPE

       Step 1: Processing raw materials:

  1. Sliced bacon. Headless shrimps only get the meat.
  2. Chopped onion soaked in ice water. Bean sprouts washed off. Sliced Carrots. Chopped green onion.
  3. Do green beans soaked in water for 1-2 hours then treat then bring cooked food.

        Step 2: Make pancake crust

  1. Making bread crust: Mix pancake dough with a small spoon of salt, a cup of beer and stirred water. Put chopped scallions and cooked green peas, stir to rest for about 20 minutes. 

        Step 3: Prepare pancake fillings

  1. Marinate shrimp, meat with pepper, salt and finely chopped shallots for 10 minutes then fry over with cooking oil. Stir until meat and shrimp are cooked and set aside. 

       Step 4: Fry the pancakes 

  1. Put a little oil in the pan and bring to a boil, stir the flour, then put 1 teaspoon of flour in the middle of a smooth pan and cover it for 1 minute.
  2. Then for the mixture of shrimp, meat, bean sprouts up and fold the cake and wait for the bread to be crispy and both sides.
  3. Keep doing this until the dough is gone. 

       Step 5: Make sauce for pancakes 

  1. Add 5 tbsp water + 2 tbsp sugar + 2 tbsp fish sauce + 1 tbsp lemon juice, then add minced garlic, minced chili and mix well. Taste to taste.

       Note: 

       Pancakes should be eaten when it is still hot. When eating you roll pancakes with rice paper and vegetables, dipped with sweet and           sour sauce will create a special flavor for the dish.

      INGREDIENT

  • Snails
  • Lemon leaves, ginger, lemongrass, chili, coconut
  •  Fish sauce, sugar, chili sauce

      RECIPE

 

       Step 1:

  1.  Soak the snails into the filtered water with 2 chilies for about 2-3 hours. Then, use the pliers to press the tail of the snail.
  2. Wash lemon leaves, lemongrass, coconut, 1 chili and cut to taste.

        Step 2:

  1. Let snail + lemongrass + ginger boil in water for 7 minutes.
  2. Then pour into the basket, retain the boiled water

        Step 3:

  1. Mix the sauce: sugar, fish sauce, chili sauce with 1 cup of boiled snail.

        Step 4:

  1. Put the onions in a pan with a little oil, mix in the snails. Add the sauce mixture in step 3, mix well.
  2. Add lemongrass, lemon leaves, coconut, chili.
  3. Add a little water to boil the snails to prevent them from drying out.
  4. Cook on low heat for 10 minutes.

        Step 5:

  1. For snails to a plate and enjoy, eat while it is still hot
